BULGARIAN FETA
This feta is full of flavor! Aged anywhere from 3 months to a year and a half, young feta offers a fresh and friendly flavor and grows increasingly complex with age. Unlike most feta available in the U.S., our Bulgarian feta is more creamy than crumbly and is made with only sheep milk. It is complex, creamy, and an excellent expression of the beauty of sheep’s milk.
SHEPHERD’S ROUGE // raclette-style melter
According to cheese lore, raclette was invented by Swiss shepherds who, while sitting around the fire eating cheese, found that their cheese melted unusually well by the hot coals. They scraped the broiled, melted cheese onto their boiled potatoes and ate it alongside pickles and vegetables.
This medium soft, mild, washed-rind cheese is at its best when melted and finishes with a delicious backend funk. Try it melted on veggies, as a grilled cheese, or in a cozy bowl of macaroni.

PASTURED MEATS
Our lamb is grass-fed rotationally grazed. We take pride in managing our sheep with their welfare and comfort in mind and take care to create a low-stress environment in which they can thrive.
We also raise pigs who enjoy the spoils of the cheesemaking life nearly as much as we do. All pork is whey-fed.
SHEEPSKINS & WOOL
Our sheep are shorn each year before lambing. We are lucky to live amongst a rich community of artisans who spin, weave, and knit our flock’s wool into beautiful objects.
We also have locally and naturally-tanned sheepskin pelts available. They are truly luxurious.
MEAT LAMBS + REPLACEMENT DAIRY EWES
Each year our crop of lambs is available at weaning the second half of April. Our genetics focus on dairy but the animals also make excellent feeder lambs.
We also offer replacement ewes lambs or intact ram lambs.
Our flock is East Friesian X with Awassi, Lacaune and others mixed in.
